Stuffed avocados are a popular snack in Colombia and elsewhere in Latin America. In Colombia we fill them with shrimp, fish, chicken, crab or tuna salad.
This recipe for Stuffed Avocado Tuna (Tuna Stuffed Avocado) is very easy to do and can be a lunch, dinner or summer great appetizer. Avocados are cut in half and filled with tuna, peas, carrots, tomatoes, parsley, cilantro, mayonnaise, salsa and ketchup.
One of my favorite ways to eat this dish as a meal, is serving stuffed avocado on top of another salad of lettuce, cucumber and tomato.
Ingredients
• 2 cans of tuna of good quality
• 1/4 cup grated white onion
• 2 tablespoons minced red onion
• 1/4 cup cooked peas
• 1/4 cup cooked carrots and diced
• Half tomato, diced
• 1/4 cup tomato sauce
• 1/4 cup mayonnaise
• 1/2 teaspoon hot sauce
• 2 tablespoons chopped parsley
• 2 tablespoons chopped cilantro
• 6 ripe but firm avocados
• Juice of 2 lemons
• Salt and pepper to taste
Preparation

  1. Combine tuna, onion, red onion, peas, carrot, tomato, ketchup, mayonnaise, chutney, parsley, cilantro and juice of 1 lemon. Mix all ingredients and add salt and pepper to taste.
  2. Cut the avocados lengthwise, remove seeds and sprinkle them with lemon juice to prevent browning.
  3. Place avocado halves on a serving plate. Fill avocados with tuna mixture and sprinkle with cilantro or parsley. Serve immediately.
