Cooking project in preparation for baby's upcoming arrival - #1 Freezer Friendly Banana Dark Chocolate Oat Muffins

In preparation of baby's upcoming arrival, I embarked on a cooking project to cook a variety of food items and freeze them in our fridge at home. The purpose is to ensure we always have some cooked food at home, when we are too busy to cook the first month with our newborn.

Since we do not have any family (only husband and I), we won't have family to bring us food. So, it is important that we stay organized and plan ahead. This past week, I completed extensive research on both freezer friendly and healthy recipes. And, I am going to take full advantage of this Easter long weekend to cook up a storm at home.

To prepare for this project, I had cleared out the freezer completely. In addition, I also have to ensure that I am well rested every day so that I have the energy to cook in the kitchen. I went to bed at 9 pm last night and woke up at 8 am - mind you, I went to the washroom like 10 times in between and baby's movement at 4 am also woke me up. But still, I feel strong enough to make my first freezer friendly food item - Banana Dark Chocolate Oat Muffins.

Unfortunately, I didn't have a good start becuase these babies tasted so good and my husband and I cannot stop eating them. However, I managed to put 4 muffins away and stored them in the freezer. I will likely make another batch tomorrow. LOL
