HOPPY HOUR: GOOSE ISLAND IPA

It hasn't been since the Peak Organic where I could smell the hops right after cracking open the bottle. It happened again with the Goose Island IPA!

This brew is very peculiar. I can smell the hops much more than I can taste it on the first three sips.

I am getting a smooth effervescent (but mostly bitter) flavor on the last few sips. This time I am getting hints of apple and tart apricot. But there is a predominant bitterness in the after taste.

If I had to classify it, the bitterness isn't as strong as lettuce (after it has flowered) and definitely not endive. But slightly more bitter than fresh sage. And even sage's bitterness waxes and wanes. The Goose IPA bitterness just skims and lingers like a flat rock across the ocean.
