说到煎酿三宝,我们客家人最喜欢吃的一道菜,这道客家风味的猪肉酿茄子,酿辣椒,酿苦瓜,酿豆腐。Eggplant pork, chili pork, tofu pork in Guangdong。

上次和大家说过我是客家人,我最喜欢酿茄子和酿辣椒,方便煮又很好吃,这个是从小一直喜欢吃的一道菜,这次特意把3样菜分开煮。煎酿三宝还有一种做法是用油煎干,皮会比较脆,但是我们喜欢煎了焖一下,小孩吃了没那么上火。

I like eggplant and chili best.This is a dish that has always been enjoyed since childhood.This time we cook the 3 dishes separately.

首先准备好,茄子,辣椒,豆腐,这次的茄子是现摘的,农村的茄子煮出来的颜色和买的茄子会不一样。

First, prepare eggplant, chili and tofu.The eggplant is picked now.The color of eggplant cooked by myself is different from that of eggplant.



这次的茄子有点小了,不过是全天然无公害的,哈哈。

The eggplant is a little small this time.But they all grow on their own.


猪肉剁碎加点油加少许盐,加上葱花,一起拌好,准备好酿进茄子里面。

Cut up the pork, add some oil and salt, add the scallion, and put it in the eggplant.


我们喜欢切厚一点,放猪肉进去。也可以煎干一点比较香脆,煎的话就切薄一点。

We like to cut it thicker and put the pork in.

 


酿辣椒,切开一个口,猪肉放进去,如果很辣的辣椒,会把手也辣到了,如果担心太辣,可以用水清洗一下辣椒的肚子。

这次用的是黄豆腐,味道也很好。中间开个小口,用筷子把肉酿进去,酿豆腐的时候需要小心一点,因为豆腐比较容易裂开。

放进锅里加油煎一下,再放水焖熟就可以上桌了,味道很好,很下饭。

再来两张用柴火大锅做的酿豆腐和酿辣椒,现在能吃上柴火做的菜是非常难得的了。这是我妈妈在煮菜,最喜欢妈妈的味道了,想念小时候。
