Jizong shitake, a type of wild mushroom that only found in summer mountains. The locals preserve this precious mushroom in rapeseeds oil and chilli, so that this deli can be enjoyed throughout the year. Paired with rice, noodle or even a bottle of beer, or served as a great appertizer.
鸡枞菌是一种长在云南深山里的野生菌,据说产量很低而且只有夏天才能采到,当地人就用鸡枞菌加上菜籽油、辣椒做成油鸡枞,作为配饭下酒的小食。尝了以后觉得鸡枞的口感很棒!厚实、有嚼劲、有弹性,但油辣椒喧宾夺主,准备再找找有没有更接近原味的鸡枞小食。
泡在油里的鸡枞,据说油吸收了鸡枞的精华,炒青菜都带着野生菌特有的香气!
The mushroom comes in a can. After finishing the mushroom, the oil is a perfect cooking oil: it will add the unique fungi aroma to a simple pan-fry dish.
