Color Challenge Thursday Green.

Avocados.

Giant green delicious fantastic avocados.

I eat avocados everyday and I have for years.

Avocados are a super fruit that provide all kinds of fantastic nutrients.

They taste delicious almost like ice cream and butter were somehow blended together with a really great flavor.

You can spread them on a piece of bread and make a sandwich that is much better, in my opinion, than any peanut butter sandwich you can find....... although I also really do love peanut butter.

They don't need to be cooked or prepared in any way whatsoever.

All you do is take a little knife and easily cut a circle around the outside in the middle and you've got two halves.

You can either pop the big brown seed out with the edge of a sharp knife and then pull it out like they do at my restaurant or you can just use a spoon or another object to gently press it out.

It's easy.

Avocados never get boring.

You can find little ones and you can find giant ones.

Some places like Tom Thumb and other chain grocery stores sell the little ones for a dollar but you can also find them at places like Aldi or Sprouts for generally around $0.50.

The large ones are often two to three times the size of the small ones and they often cost a couple of dollars.

They are a meal in and of themselves. What I usually do is cut them in half and spread avocado on a couple of pieces of toast that have melted cheese on them....... and then put a couple of tomatoes on there to make a delicious sandwich.

If you add a baked potato you've got a delicious and very healthy meal.

Avocados are perfect for color challenge Thursday green.
