Cooking with Chelsey - Spicy Chicken Burrito Bowl (Home Cooking Adventures)

I've been completely obsessed with Guzman's Spicy Chicken Burrito Bowl.

Since my money is slowly going down the drain by the amount of burrito bowls I have been purchasing as of late, @nishyfishy and I decided to attempt our own version!

Today, I would love to feature our take on a chicken burrito bowl. We incorporated a lot of healthy ingredients so for those health fanatics out there, I hope you're proud :D

Ingredients

  • A clove of garlic, diced
  • 3 skinless thigh fillets, pan fried
  • 2 tomatoes, diced
  • 1 red onion diced
  • 1 avocado, mashed
  • 1/4 lemon
  • Black rice
  • Harberno sauce (or any sauce of your choosing)

Method

Chicken

  • Pan fry the chicken until juicy and tender
  • Wait for it to cool before dicing them up into cubic chunks

Rice

  • With either a normal pot or a rice cooker, pop in however much rice you would like - we were only cooking for two so 2 cups of rice was plenty.
  • Add 1.5 cups of water + how many cups of rice you had. So for me, with 2 cups of rice, I added 3.5 cups of water. If you only had 1 cup of rice, add in 2.5 cups of water.
  • If you would like, once the rice is all cooked, place it in the pan and fry it for a few minutes to get a crunchy texture!

Guacamole

  • Take one whole avocado and mash it up in a bowl.
  • Drizzle some lemon juice and season with salt and pepper

Compiling everything together

  • Pop a serving of rice in a bowl before adding the chicken, guac and freshly diced tomatoes
  • Sprinkle with red onion and shredded cheese
  • Add a sauce of your preference - I like mine hooooooot!
  • @nishyfishy decided to experiment even more and add in broccoli as well - so this recipe is super easy to alter!

YAY! it was super delicious and had lots of fun recreating the burrito bowl. One thing i would suggest adding is black beans but unfortunately we forgot to purchase them on our supermarket trip :(
