More Comfort Food at Home - This week's dinners + TV shows

Tonight, I am home alone as hubby has a birthday dinner to attend. Although I am eating dinner on my own, I was still in the mood to make something delicious for myself and baby.

In fact, we had some delicious and easy to prepare dinners this past week. During the weekday, I get tired easily but the goal still is healthy food as my #1 priority. Here is a recap of my dinners this week:

Who say you can't have breakfast for dinner?! I was so hungry on Monday around 4:30 pm. So, I made this easy spinach omelette with some kiwi to satisfy my hunger.

Tuesday was meatball with pasta and kale. I used ground beef and ground pork to make it super moist and tasty.

Wednesday was pan fried salmon with saute spinach. How healthy was that?!

Thursday was meat patties with Brussel sprouts. I actually used the left over meatball mixture from Tuesday for the patties.

Friday (tonight) was mushroom onion celery turkey meatloaf with broccoli. You see, I always include lots of veggies in my diet and I feel great eating healthy.

In terms of TV shows this week, we are up to date with Homeland, Silicon Vally and Last men on earth. We also started watching Westworld, but their first episode was a bit brutal!

P.S. Baby is baking nicely inside me and we are getting ready to welcome him soon.
