Crispy Ribboned Carrots with Cranberries and Roasted Nuts Salad
in a Sweet and Sour Sauce

I must admit - I didn't think I would be able to participate in this weeks contest since we are still on holiday... BUT I'm glad I was able to make it! So here is my last minute entry for this competition while still away on a beautiful, rural farm in Maleny (Australia)!
This salad I prepared for today's picnic lunch with our friends. It might not be the most inventive salad but its definately a simple, healthy and delicious one! :)

Crispy Ribboned Carrots with Cranberries and Roasted Nuts in a Sweet and Sour Sauce

Love my salad!


This is a pretty simply salad to make - however, you've got to prepare it 1 day before serving, since it needs time to set in the refrigerator in order to absorb all its delicious flavors!

Ingredients:

For Salad:
5 carrots, peeled and grated (or shaved with a vegetable peeler)
½ cup dried cranberries
1 bunch of fresh chives, chopped
4 tablespoons fresh parsley, chopped


For seasoning:
½ cup extra virgin olive oil or canola oil
1/3 cup vinegar
3 tablespoons brown sugar
3 cloves garlic, chopped
2 tablespoons soy sauce
salt and pepper to taste


Additions:
slivered almonds, sunflower seeds, pine nuts


Method:

*In a bowl toss and combine all salad ingredients together.
*Place sauce ingredients in a small sauce pan. Heat and mix until sugar dissolves and combines in sauce.
*Pour the sauce on the salad, mix, cover and refrigerate for at least 8 hours to allow the flavors to blend.
*On a pan on medium-low heat toss nuts and seeds (or any other additions desired) until lightly golden brown. Place on the side until serving.
*Before serving: Toss in the roasted nuts and seeds, mix and serve with a big smile! 😊
