Sprouting Mung Beans After 48 Hours dailyfoodphotography

When we last saw these sprouting mung beans after 24 hours, their little tails were just popping out. Well, after 48 hours, the excitement never ends. Just look at them now!

The volume of food has about doubled, the hulls are pretty much off the sprouts, and the tails are shooting out nicely. This is still not food though. I usually eat a couple of sprouts at this time to test them and the taste is not that great - they are a little bitter and a little hard. Tomorrow will be a better day.

Sprouting mung beans – or any bean – is part of my new healthy diet after losing “Half My Size” a few years ago. All beans give protein and mung beans are supposed to be one of the best of the best in that category.

I also mentioned the anti-inflammatory properties of mung beans in another post of this series and that was the real reason I started. Another benefit is a reduction in indigestion and gas when eating any type of bean. If beans have this effect on you, even a short bit of soaking and sprouting time will improve that problem.
