Have you got left over mashed potatoes?

I went to visit my great aunt with my grandmother, and her daughter had this marvelous treat to offer us with a cuppa tea...

This is a wonderful snack that you are going to find strange, but when you taste it, you will LOOOOVE them, I promise!

Mashed potato or Mayonnaise scones
For this you will need:

3 cups unsifted all purpose flour
6 teaspoons baking powder
1/2 teaspoon salt
1/2 cup white sugar
5 tablespoons of butter
1/2 cup of raisins or chocolate chips (cranberries or your favorite nut or seed would also do)
1/2 cup mashed potatoes OR mayonnaise
1 to 1 1/2 cups milk depending on the mixture
1/2 tablespoon vanilla

DIRECTIONS:

Sift dry ingredients (including sugar) into mixing bowl. Cut in butter as you would pastry. Add raisins or chocolate chips. Mix potatoes (or mayonnaise), milk and vanilla together in a separate bowl and then pour into dry ingredients. Stir with a fork enough to moisten the dry particles (you may need to add 1/2 a cup and an additional tablespoon or two of milk if the dough is too dry).

Drop by heaping a tablespoon at a time on 2 oiled metal cookie sheets, I like to line the cookie sheet with parchment paper rather than using oil.

Bake on a high oven rack at 425°F for 10 to 15 minutes depending on the size.

These scones brown quickly on the bottom, so if your cookie sheets are dark or thin, cover them with an oiled household foil before dropping the soft scone dough.

Makes about 30 scones.
