Cauliflower Soup with Sesame & Chilli Oil: Medicinal Cooking Collective Week 4

Here is my dish for week 4 of the Medicinal Gourmet Cooking Collective. This week I have made a dish that embodies all the aspects of the Metal element. This dish is predominantly white, and topped with a spicy flavour of chilli oil. I've never made this before, but i can testify that the bowl was licked clean! A really simple and delicious recipe! Cauliflower is also shaped like the lungs which makes is a perfect ingredient for this challenge. Cauliflower is a rich source of vitamin C, folate, vitamin K, B complex vitamins and vitamin E. It provides vital minerals such as calcium, magnesium, phosphorous, potassium, zinc, sodium and iron without adding any harmful cholesterol. It is a good source of protein, a substantial amount of phytochemicals, unsaturated fats, and essential omega-3 fatty acids and contains a very of fat. It also provides dietary fibre and contains smaller amounts of natural sugars.



Ingredients (all finely chopped)

  • Cauliflower
  • Onions
  • Garlic
  • Coconut flakes
  • Coconut milk
  • Cinnamon
  • Garam massala
  • Nutmeg
  • Sesame Seeds
  • Fresh Coriander
  • Coconut Oil

How I made It:

  • Steam the cauliflower or boil gently until tender.
  • Chop the onions and fry in coconut oil or other oil
  • Chop and add the garlic and fry for a few minutes.
  • Add cinnamon and nutmeg and fry until onions are golden brown.
  • Add cauliflower and fry until browned slightly.
  • Add all ingredients to a blender along with the coconut milk and water until it forms a smooth consistency.
  • Garnish with coriander and chilli oil with sesame seeds.

I hope this has been interesting for you.. it took about 20 minutes to make, and i look forward to eating the leftovers for dinner!
