“What’s for Lunch?” Healthy Recipe Series #16 - Baked Salmon Meatballs with Creamy Avocado Sauce

I had no desire to cook and I didn’t have many ingredients but I was starving. A can of salmon sat in the cupboard and since I wanted to continue avoiding red meat, I decided to make a “normal” meat recipe with fish instead!

Baked Salmon Meatballs with Creamy Avocado Sauce

Ingredients:

Meatballs
- 1 can of salmon
- 1/2 medium onion, grated
- 1/4 cup bread crumbs
- 1 egg
- 2 garlic cloves, minced
- 1/2 tsp. paprika
- 1/2 tsp. ground oregano
- Salt & pepper

Sauce
- 1 avocado
- 3 tbsp. plain yogurt
- 1 garlic clove, minced
- 1/2 lime, juiced
- 5 tbsp. water
- 1/4 tsp. chipotle powder
- Salt & pepper

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Pulse the salmon in a food processor until finely chopped.
  3. Transfer to large bowl and add egg, onion, garlic, breadcrumbs, and spices. Stir to combine.
  4. Roll into bite size balls and place on baking sheet.
  5. Bake 15-18 minutes.
  6. While meatballs are baking, blend all of the sauce ingredients together in a food processor or blender until they reach a creamy and smooth texture.
  7. Serve meatballs with sauce and enjoy!

I will admit that I juiced a full lime instead of a half and it was very acidic and tart! Tasty… but tart! So start with less and add more to taste!

I also left them in the oven a little longer than necessary and they did dry out a little so make sure not to overbake them!

The original recipe called for cilantro but I had to eliminate that because as I mentioned before, I have those special tastebuds that DESPISE cilantro! Can’t touch the stuff! But if you enjoy it, chop some up and add it!
