Cooking At Home: Shrimp Fried Rice

Today, I will share with you how to prepare Fried rice with shrimps or chicken. In my case I will prepare Shrimp fried rice. This is a simple recipe, easy to cook and delicious. You will love it!

Ingredients

Vegetable oil, 4 tablespoons, I recommend canola oil due to its two essential acids and being free of cholesterol.

1 cup bean sprouts, should be fresh.

200 grams of medium shrimp. Should be peeled and deveined.

3 lightly beaten eggs.

2 teaspoons of grated ginger.

A bunch of white and light green parts of scallion.

Minced garlic-2 teaspoons.

Two cups of frozen vegetables (peas, carrots and corn).

4 teaspoons of soy sauce.

White rice, 3 cups.

Directions

Put 6 cups of water in a saucepan and allow to boil. Add rice in the saucepan, stir, reduce heat then cover and simmer for 20 minutes. Set the rice aside to cool.

In a large round bottomed cooking pan, put two tablespoons of canola vegetable oil and allow to heat. Add the shrimp, stir until it changes to pink. Remove the shrimp on a plate and set aside.

Place the pan back on the heat and add eggs in one layer, cook for a minute or two, put them on a board and chop roughly.

Clean the pan and put it back on the heat. Put 2 tablespoons of the remaining vegetable oil. Slice the scallions into smaller pieces, add ginger and garlic then put them on the heated pan.

Cook for half a minute or until they have a pleasant smell. Add the already cooked rice, stir till it turns brown. Add the vegetables and soy sauce, stir and cook for 2 minutes.

Add the chopped eggs back into the pan together with the shrimp and stir for 1 minute.

Serve while hot.
