How to prepare a Squid Cazuela with waffle fries!

Hello Steemians! Today I'm gonna show you how to prepare a Squid Cazuela.

As Wikipeda says, the "Cazuela (Spanish pronunciation: [kaˈθwela]) is a general name given to a variety of dishes, especially from South America. It receives its name from the cooking pot in which is cooked. The ingredients and preparation vary from region to region, but it is usually a mid-thick flavoured stock obtained from cooking several kinds of meats and vegetables mixed."

For this preparation I'm using just the squid fins. If you ever wondered how the squid is caught you may want to take a look a this article.

You will need:

  • 1 1/2 kg of Squid Fins
  • 1 Bell Pepper (red)
  • 2 Big Onions
  • 2 Garlic Cloves
  • 1/2 glass of Sherry wine
  • 2 teaspoonful of Paprika
  • 1 1/2 kg potatoes (I prefer the Asterix type for frying)
  • Sunflower oil (for frying)
  • Salt, pepper & olive oil

Chop the red bell pepper, two onions and two garlic cloves. Chop the squid fins in small strips.

Slightly saute the vegetables in the saucepan using olive oil. Add the squid fins strips.

Cook the mix for about 10 minutes and then add 2 teaspoonful of Paprika, the Sherry wine, salt and pepper.

Cook for another 20 more minutes and it will be ready; check the texture of the squid, it must be tender if not keep cooking a couple of minutes.

Waffle Fries

Peel the Asterix potatoes (or the ones you like) and then with a mandoline cut the potatoes like this:

Warm up the sunflower oil in a pan and when it is hot enough you may begin to fry some potatoes:

You may use absorbent paper to reduce the amount of oil on the fried potatoes.
