You've likely made some version of fried rice before. Here in Cambodia it's a staple dish. Though we don't eat it as often as Khmers, fried rice variations are a regular at our home to clear out the fridge.
It's easy, cheap and super fast to make. They only thing you need to do is take a bunch of leftovers veggies and fruits put them in a hot skillet and there's dinner. Though we absolutely love this easy fool-proof method of putting healthy dinners on the table, we just don't like rice that much. Not even the brown or black varieties.
I know.... people often ask what we eat in Asia hehe. But anyways, there are so many other yummy grains and non-grains (such as cauliflower rice) you can use to make this Asian favorite.
This time I used cooked quinoa.
INGREDIENTS (SERVES 2)
1.5 cup red cabbage, chopped
1.5 cup Chinese cabbage, chopped
2 cups carrot, finely chopped
1 cup broccoli, cut into small florets
1 cup green peas
1 cup pineapple, cut into small cubes
1-2 Thai chili pepper or jalapeno finely chopped
2 cups uncooked quinoa rinsed, we used a mix of red and white quinoa
1 tbsp ground cumin
3-4 cloves garlic minced
2 tbsp fresh grated ginger
2-3 tbsp soy sauce/Tamari
1/3 cup spring onions, finely chopped
Black pepper and sea salt to taste
DIRECTIONS
- Cook quinoa according to the instruction on the package. This will take about 15-20 minutes.
- Meanwhile, cut all vegetables.
Heat cooking oil (we used extra virgin coconut oil for its added coconut flavor) in a large skillet or wok over medium-high heat. Add garlic, chili peppers, and onions. Cook, stirring often until onions are translucent. This will take about 4-5 minutes. - Then stir in carrots and broccoli. Cook, stirring constantly until vegetables start to soften. This will take another 3-4 minutes.
- then add red and Chinese cabbage, peas, pineapple and cooked quinoa. Cook, stirring constantly until heated through, about 1-2 minutes.
- Add spring onions, ginger and soy sauce. Cook, stirring constantly until heated through. This will take about 1-2 minutes.
