🍲 30-MINUTE DINNER | INDIAN-STYLE POTATO DHAL WITH TOASTED BLACK SESAME 🍲

Good day my lovely steemit family. I think you may have noticed that my life has been crazy busy with our tuk-tuk bakery. Looking forward to our 2 days of on Wednesday en Thursday.

Though I am still making green drinks every day and cooking plant-based meals, I just don't find enough time anymore to post them all. Once I have more time I surely will share them with you as I have discovered a few new and yummy things.

Patience hehe.

Though I still spend a lot of time in the kitchen whenever I can, recipes as the one I'll add below are my new go-to quick and easy meals. They burst with flavor and yummy plant goodness and are so easy and super fast to make.

Ready? here we go.

INDIAN-STYLE POTATO DHAL WITH TOASTED BLACK SESAME

INGREDIENTS (serves 2)


Β½ cup onion, chopped
2-3 cloves of garlic, minced
Β½ cup carrot, finely chopped
Β½ cup bell pepper, finely chopped
1.5 cup potato, cubed
1-inch freshly grated ginger, or to taste
Β½ cup uncooked split lentils (we used yellow split lentils)
1 cup tomato, chopped
2 cups water
Optional topping: toasted black sesame seeds

Herb mix


2 tsp ground cumin
ΒΌ tsp ground cinnamon
1 bay leaf
Β½ tsp turmeric powder
Sea salt and black pepper to taste

DIRECTIONS


  1. Heat cooking over medium heat and saute onion for 3 to 5 minutes. Stir in garlic, herb mix, ginger and cook for one minute more. Stir regularly.
  2. When fragrant, add carrot, bell pepper, potato, tomato, lentils, and water. Cover and cook 20 minutes.
  3. Divide over serving bowls and top with toasted black sesame seeds. Easy as that.
