Good day my lovely steemit family. I think you may have noticed that my life has been crazy busy with our tuk-tuk bakery. Looking forward to our 2 days of on Wednesday en Thursday.
Though I am still making green drinks every day and cooking plant-based meals, I just don't find enough time anymore to post them all. Once I have more time I surely will share them with you as I have discovered a few new and yummy things.
Patience hehe.
Though I still spend a lot of time in the kitchen whenever I can, recipes as the one I'll add below are my new go-to quick and easy meals. They burst with flavor and yummy plant goodness and are so easy and super fast to make.
Ready? here we go.
INDIAN-STYLE POTATO DHAL WITH TOASTED BLACK SESAME
INGREDIENTS (serves 2)
Β½ cup onion, chopped
2-3 cloves of garlic, minced
Β½ cup carrot, finely chopped
Β½ cup bell pepper, finely chopped
1.5 cup potato, cubed
1-inch freshly grated ginger, or to taste
Β½ cup uncooked split lentils (we used yellow split lentils)
1 cup tomato, chopped
2 cups water
Optional topping: toasted black sesame seeds
Herb mix
2 tsp ground cumin
ΒΌ tsp ground cinnamon
1 bay leaf
Β½ tsp turmeric powder
Sea salt and black pepper to taste
DIRECTIONS
- Heat cooking over medium heat and saute onion for 3 to 5 minutes. Stir in garlic, herb mix, ginger and cook for one minute more. Stir regularly.
- When fragrant, add carrot, bell pepper, potato, tomato, lentils, and water. Cover and cook 20 minutes.
- Divide over serving bowls and top with toasted black sesame seeds. Easy as that.
