🌈 Rainbow Pineapple Red Cabbage Salad with Maple Syrup Lime Dressing 🌈

All the colors of a rainbow in one delicious, tropical meal. Healthy, quick, and delicious. The perfect summer lunch. Only looking at the colors makes me happy. Enjoy the rest of this beautiful Sunday!

Ingredients (serves 2)

The honey lime dressing

1 lime or lemon juice only
1 tsp maple syrup
1/2 tsp soy sauce or Tamari
Black pepper to taste

The rainbow salad

1 cup carrot, julienned
1 cup shredded red cabbage
1 cup cucumber, cubed
1/3 cup chopped red onions
1/3 cup finely chopped spring onion
2 cups shredded salad greens of your choice
1 cup pineapple chunks

For the toppings

2 tbsp pumpkin seeds or pepitas, raw or roasted
2 tbsp dried goji berries
2 tbsp unsweetened desiccated coconut

Directions

  1. In a small bowl, whisk together all dressing ingredients. Set aside.
  2. Combine all salad ingredients in a large salad bowl. Toss to combine.
  3. Divide salad mix over bowls or plates. Drizzle with lime honey dressing and top with pumpkin seeds, goji berries, and coconut.
