Breakfast time! I love dragon fruit (pitaya). While it doesn't have much flavor compared to other tropical fruits, I absolutely love the texture, and they look amazing too.
They come in 2 colors and house a wide range of essential nutrients. In tropical and subtropical regions, like SE-Asia Asia, they grow in abundance all year long. The dragon fruit’s outer skin is cactus-like, resembling that of the scales of a mythical dragon. Hence it name.
This creamy white or pink funny-looking fruit contains around 60 calories and is a rich source of vitamin C, B1, B2 and B3, and minerals such as iron, calcium, and phosphorus.
Ingredients
- 1 cup plain unsweetened yogurt, we used homemade coconut yogurt
- 1 banana sliced
- 1 dragon fruit (pitaya), chopped
- 2 passion fruits
- 2 tablespoons pumpkin seeds (pepitas) raw or roasted
- 2 tablespoons unsweetened shredded coconut
- 2 tablespoons dried mulberries (optional)
Directions
- Chop fruits in small pieces.
- Combine fruit and (coconut) yogurt in a bowl.
- Top with pumpkin seeds, desiccated coconut and mulberries or other superfoods - such as goji berries, raw cacao nibs or chopped almonds - if you like.
