Raw Cookie Dough Bites...
Are a super simple and delicious treat that nourishes and energizes your body....
Are refined sugar free, grain and gluten free, vegan, so can be included in many restricted diets...
And they are so easy to make.
I'm not on a restricted diet, but I do like to eat healthier treats when I can. This recipe is so easy and the cookie dough bites so satisfying that I make them quite often. The chocolate bites are dense and chewy like an underbaked brownie, and the ones without chocolate are like classic cookie dough mixed with a chewy caramel.
When you try them I'm sure you'll see why they're a favorite in my home...
Ingredients and Method:
- 2 cups raw cashews
- 1 cup pitted dates (medjool are the best)
- 1/4 tsp salt
- 1/2 tsp vanilla, ground ginger, and cinnamon
- 1/4 cup chocolate chips/ cacao paste
Ingredients line up
Step 1: Measure cashews into food processor. Process to a fine crumb.
Step 2: Add pitted dates, vanilla, salt,and spices. Process until it all comes together in a doughy mass. This can take up to five minutes.
Here's the dough without chocolate. I roll a few bites for my youngest at this stage.
Add the chocolate chips. I'm using unsweetened cacao paste so I add a few more dates to sweeten it up. If you want the chocolate chips to stay whole let the dough cool down a bit before adding them.
Process until it's all combined. The heat generated from the food processor will melt the chocolate, I like it like that.
Roll them into balls and let them cool awhile, be sure to sample as you do :)
When I first had these it was at a friend's house, she had used oats in hers which make them taste more cookie-ish, but give me heartburn. If you want to add oats, try about 1/2 cup at the beginning with the cashews.
Maybe I should call them chewy love nuggets...
