How's the weather at your place? Here in south England is windy and grey but the rain has finally stopped. ☁️ 🌧️ I'm so tired of the bad weather. Summer where are you?? I'm waiting so much to meet you again! β˜€οΈ β˜€οΈ

To feel a little better on these cold winter days I usually make tasty tropical dishes. Here's one of our favourites: baked chicken breast with pineapple topped with cheese. I've found this the best and easiest way to eat Hawaiian chicken {gluten-free, clean eating}

This recipe is incredibly quick and easy to make, it’s gluten and refined sugar free, so this chicken bake is genuinely good for you and that tastes a million times better than take out.

Hawaiian Baked Chicken

Prep time: 5 mins | Cook time: 40 mins | Serves: 2-3

Ingredients

  • 2 large skinless boneless chicken breasts
  • 3-4 slices of pineapple from can or Β½ can of pineapple chunks
  • 3 tablespoons pineapple juice (reserve it from can)
  • β…“ cup grated cheese (Parmesan or Cheddar)
  • Β½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • salt
  • pepper

Let's get started!

  1. Preheat the oven to 200Β°C | 400Β°F.
  2. Half the chicken breast fillets lengthwise. Rub the slices with salt, pepper and garlic powder.
  3. Heat one tablespoon olive oil in a skillet, when it's hot add the chicken and cook for 3-4 minutes, then turn them and cook for another 3-4 minutes, until the chicken turns white.
  4. Transfer the chicken breast and the olive oil from the skillet into a baking dish. Place the pineapple on top of the meat.
  5. Pour 3 tbsp of pineapple juice from can over chicken. Cover the baking dish with foil.
  6. Bake the chicken for 25 minutes until tender, then remove from oven and sprinkle grated cheese over the meat.
  7. Place back the chicken into the oven (uncovered) for 4-5 minutes, until the cheese is melted and has a golden color.
  8. Serve immediately with rice!
