Slow Cooker Vegetarian Nachos Recipe

I've been vegetarian now for the last 7 months. I thought I was going to fall off the wagon at Christmas but I stayed strong, and hungry.

I've been craving meat but every time I think about what I want to eat, I never feel like eating an animal so..(shrug)

I'm not the best cook so I always go for the fool proof easy route.

This Slow Cooker Vego Nachos is totally easy route.

What You'll Need

A slow cooker
1 can of Kidney Beans
1 can of Chick Peas
1 cup of Red Lentils
2 cups of Corn
2 cans of Diced Tomatoes
1 can of Condensed Tomato Soup
half a can of Water
1 packet Taco Seasoning

Sour Cream and Corn Chips.
Jalapenos optional.

Where I could, I opted for the Organic versions. I also made sure to wash and soak the beans, chick peas and lentils before throwing them in the slow cooker

Taco Seasoning (I used the El Paso brand, but I have also made my own seasoning which always ended up too spicy so I went back to packet lol)

Set on Low for 6 hours

Serve with Sour Cream, Corn Chips.

Imagine it topped with sliced jalapenos, corn, chopped tomatoes, avocado ~ You seeing the vision?

This is one of our fave vego meals. Not only is it tasty, it's a bit fun with the corn chips, it's filling and it's a cheap meal to make.

Aside from all the soaking and rinsing, this dish requires very little effort. Why don't you give it a go and use your fave taco mix?
