No Bake - Smooth & Creamy Pumpkin Cheesecake With Pecans (Recipe Included)

With the leaves falling and the air getting colder, we are reminded once again that the season is here for pumpkins, pumpkins and more pumpkins. What better way to start off with a delicious treat combining pumpkin, cheesecake and pecans. Not only will your tummy thank you but it is sure to be a new favorite on your list for holiday baking as well.

We love cheesecake and this one is so light and airy that the whipped topping is totally optional. Combining the taste of creamy cheesecake with the smooth rich taste of pumpkin will create smiles a mile wide around your table. Top with drizzled chocolate and pecans, of course you could add whipped topping if you desired.

Are you ready for the recipe? Ok, here you go. On your marks, get set, go-

Ingredients

  • 2 prepared 8" graham cracker pie crust (if you need recipe for the crust, let me know)

  • 1 1/2 cups of pumpkin or 1 1/2 cups of canned of pumpkin

  • 2 packages of cream cheese

  • 1 1/2 cups of light cream

  • 1 teaspoon of pumpkin pie spice

  • 1 teaspoon of cinnamon

  • 1 cup of sugar

  • 12 oz of cool whip

  • 2 teaspoons of vanilla

    • (I make mine from madagascar whole vanilla bean, but you can use vanilla extract)

Directions

Soften cream cheese until it is smooth, blend in the light cream and whip until airy and light

In a separate bowl mix the pumpkin, sugar, cinnamon, pumpkin pie spice and vanilla until well blended then add to the cream cheese mixture

Add the cool whip a spoonful at a time so it will be easier to blend

Mix on high until the smooth

Spoon the cheesecake into your pie crusts

Top with pecans and drizzled chocolate (I used melted chocolate baking chips) Add whipped topping on last
Chill in refrigerator for 3 hours before serving

Makes 2- 8" cheesecakes
