VEGAN PUMPKIN PANCAKES

INGREDIENTS:
250g of hokkaido pumpkin
1 big banana
1/3 cup of oat flakes
1 cup of spelt flour
2 teaspoons of flax seeds or chia seeds
oatmeal milk
a pinch of salt
cinnamon
zest of one bio orange
coconut oil

METHOD:
Scoop the pumpkin and cut into slices, add banana, a pinch of salt, cinnamon, zest of one bio orange and shake it in a blender.

Add about half a cup of oat milk and blend to obtain a solidly dough. Add 1/3 cup of oat flakes and a cup of spelt flour. Add 2 teaspoons of flax or chia seeds and a pinch of salt, cinnamon, zest of one bio orange blend again. If necessary, add some milk and mix again.

Melt a bit of coconut butter in the pan, pour in batter and rotate it during the baking process, until it’s thin and well baked on both sides.

Above a water bath melt few pieces of dark chocolate. In addition to melted chocolate, almond butter is also excellent. When baked, fill them with blueberries, walnuts and roll them up. Decorate it with a few crumbs of crushed walnuts, blueberries and chocolate.
