For #46 Culinary challenge I prepared apple pie using apples from my orchard.
INGREDIENTS:
350 g of flour
1 teaspoon baking powder
120 g of sugar
a pinch of salt
150 g of sliced butter
2 eggs
3 tablespoons of yogurt
FILLING
6-7 large apples
80 g of brown sugar
1 teaspoon of vanilla extract
2 tablespoons of lemon juice
2 tablespoons of butter
cinnamon
In a bowl combine salt, sugar and sliced butter and mix it with a whisk until mixture resembles coarse meal, with just a few pea-size pieces of butter remaining. Add eggs and mix.
Add yogurt, flour and baking powder and knead the dough with your hands. Wrap it in a stretch foil and store it in a refrigerator for 30 minutes.
Wash, peel and grate the apples and sprinkle them with some lemon juice.
Put gated apples in to the pot and add sugar, vanilla extract and butter. Cook it for 15 minutes and strain it.
Take the dough out of the refrigerator and place the 2/3 of dough on the bottom of the baking tray.
Place apple mixture on the dough. Roll rest of the dough to oblong forms and place them on the top of the pie that looks like a net.
Put it in the oven for 40 minutes on 180 °C. Decorate it with powdered sugar.
