My second entry for STEEMIT CULINARY CHALLENGE #49- Cakes and pies
RASPBERRY CHOCOLATE PIE
300 g of rice flour
180 g of coconut butter
80 g of coconut sugar
2 eggs
a pinch of salt
200 ml of heavy cream
3 tablespoons of rice flour
2 egg yolks
1 tablespoon of rice flour
50 g of coconut butter
150 g of dark chocolate
3 bananas
100 g of raspberries
Combine ingredients: rice flour, coconut butter, 80 g of coconut sugar, 2 eggs, a pinch of salt in a bowl. Knead the dough with your hands.
Wrap the dough in a stretch foil and store it in a refrigerator for 30 minutes.
Cover tray with baking paper and grease it with coconut butter.
Take the dough out of the refrigerator and place the 2/3 of dough on the bottom of the baking tray.
In a bowl combine heavy cream, a tablespoon of coconut sugar, 2 egg yolks and mix it. Add 3 tablespoons of rice flour and mix. Mash bananas and put them into the mixture. Melt coconut butter and dark chocolate and mix them with the mixture.
Pour the mixture over the dough.
Use the rest of the dough and make a decoration.
Bake it for 45 mintes on 180 °C.
