VEGETABLE, CHEESE AND FRUIT SANDWICHES

BREAD: SESAME SEED BREAD, WHITE BREAD WITH ROSEMARY AND PUMPKIN OIL, GARLIC CORNBREAD, DARK BREAD

INGREDIENTS:

1 kg of white wheat flour

500 g of corn flour

500 g of wholemeal wheat flour

48 g of fresh beer yeast

70 g of coconut butter

1,05 l of milk

45 g of honey

4 teaspoons of fine ground salt

1,5 teaspoon of roughly ground salt

2 tablespoons of fresh chopped parsley

2 garlic cloves

6 tablespoons of cold pressed extra virgin olive oil

6 tablespoons of pumpkin oil

2 tablespoons of sesame seeds

2 eggs

SESAME SEED BREAD

Mix 2 dl of warm milk (around 30 °C) with 2 teaspoons of honey and 3 tablespoons of flour. Add 24 g of fresh beer yeast and put it in a warm place (up to 35 °C) and wait until it rises.
Put one kg of white wheat flour in a bowl. Add 2 teaspoons of salt and bury it in flour. Add yeast and 5 dl of warm milk (around 30 °C). Melt 40 g of coconut butter, cool it down on 30 °C and add it to the mixture.
First start mixing it with a wooden spoon then start kneading it with your hands.

Add some flour if needed. Leave it in a warm place (around 30 °C) until the dough rises and cover it with a kitchen cloth. The dough rose enough when it gets one time bigger. Knead the dough and leave it rises again.
Knead the dough and cut it on half. Roll up one half to oblong shape and put on a baking tray. Save the other half of the dough for later.
Mix one egg. Melt 5 g of coconut butter and cool it down. Pour half of mixed egg into melted coconut butter add 2 tablespoons of sesame seeds and mix it. Grease the dough with it and sprinkle it with 0,5 teaspoon of roughly ground salt. Save half of a mixed egg for later.

Wait until the dough rise again and put it in the oven for 45 minutes on 180 °C. The bread is baked when it's golden brown color. Put it out of the oven and cover it with wet kitchen cloth.

WHITE BREAD WITH ROSEMARY AND PUMPKIN OIL

Knead the other half of the dough. Add 5 tablespoons of pumpkin oil, a few twigs of chopped rosemary and knead some more. Add some flour if needed.

Roll it up to oblong shape. Mix one tablespoon of pumpkin oil, few chopped twigs of rosemary, half of an egg and grease the dough with it. Sprinkle it with 0,5 teaspoon of roughly ground salt. Wait until the dough rises again and put it in the oven for 45 minutes on 180 °C. When the bread is baked put it out of the oven and cover it with wet kitchen cloth.

GARLIC CORNBREAD

Mix 1 dl of warm milk (around 30 °C) with a teaspoon of honey and 1,5 tablespoon of flour. Add 12 g of fresh beer yeast put it in a warm place and wait until it rises.
Put 500 g of corn flour in a bowl. Add a teaspoon of salt and bury it in flour. Add yeast, 2,5 dl of warm milk, 1 chopped garlic clove, a tablespoon of chopped parsley and 5 tablespoons of olive oil.
First start mixing it with a wooden spoon then start kneading it with your hands. Add some flour if needed.

Put it in the oven for 45 minutes on 180 °C. When the bread is baked put it out of the oven and cover it with wet kitchen cloth.

DARK BREAD

Mix 1 dl of warm milk (around 30 °C) with a teaspoon of honey and 1,5 tablespoon of flour. Add 12 g of fresh beer yeast put it in a warm place and wait until it rises.

Put 500 g of wholemeal wheat flour in a bowl. Add a teaspoon of salt and bury it in flour. Add yeast, 2,5 dl of warm milk, 20 g of honey and 20 g of coconut butter.
First start mixing it with a wooden spoon then start kneading it with your hands. Add some flour if needed.

Leave it in a warm place until the dough rises and cover it with a kitchen cloth. Knead the dough and leave it rises again. Knead the dough, roll it up to oblong shape and put it on a baking tray.
Mix half of an egg and 5 g of melted coconut butter and grease the dough with it. Wait until the dough rises again. Put it in the oven for 45 minutes on 180 °C. When the bread is baked put it out of the oven and cover it with wet kitchen cloth.

CREAMCHEESE WITH HERBS

300 g of organic curd cheese from sheep`s milk
15 g of red onion
100 g of sour cream
a tablespoon of mustard
2 tablespoons of pumpkin oil
1 teaspoon of roughly ground salt
black pepper
basil
parsley

Put 300 g of organic curd cheese from sheep`s milk on a plate or a bowl and mash it with a fork. Add 15 g of fine chopped red onion, 100 g of sour cream, a tablespoon of mustard, 2 tablespoons of pumpkin oil, 1 teaspoon of roughly ground salt, black pepper, basil, parsley and mix it. Put in a refrigerator util serving.

VEGGIE PATE

200 g of sunflower seeds
70 g of carrot
1 garlic clove
0,5 teaspoon of salt
black pepper
marjoram
thyme
2 teaspoons of lemon juice
0,5 dl of cold pressed extra virgin olive oil
1 dl of water

Put 200 g of sunflower seeds in cold water and leave it for 8 hours.

Pour away the water and put the sunflower seeds in the blender, add 1 dl of water and blend it.

Add the rest of the ingredients into the blender: 70 g of chopped carrot, a garlic clove, marjoram, thyme, a teaspoon of salt, a pinch of black pepper, 2 teaspoons of lemon juice and 0,5 dl of cold pressed extra virgin olive oil.

HONEY CHEESE SPREAD

200 g of cow's milk curd
3 tablespoons of honey
a teaspoon of lemon juice
1 teaspoon of lemon zest

Mix all the ingredients on a plate or in a bowl.

TOPPINGS

100 g of goat's milk young cheese
150 g of cherry tomato's
1 green pepper
half of a red pepper
black and green olives
rosemary twigs
parsley leaves
half of a cucumber
a few capers
150 g of strawberries
a tablespoon of strawberry jam
cinnamon

Cut all the vegetables, cheese, herbs and fruits on different shapes.

Spread different spreads on breads and decorate it with toppings.
