STEEMIT CULINARY CHALLENGE #46: Coconut cake with apples

Only once have we taken part in the Steemit Culinary Challenge and we knew it would not be the last. Apples give a lot of space for creativity and we really love it.

Our recipe of choice is an apple coconut cake. The initial recipe is available here. We only altered it a bit, adding wheat flour and eggs. Let my just quickly provide it in English.

Ingredients

  • 4 apples
  • 1 250 ml cup of coconut flour
  • 500 ml plant based milk-like drink (we used almond drink)
  • 1/2 250 ml cup rice flour
  • 1/2 250 ml cup potato flour
  • 1/2 250 ml cup wheat plain flour (we added this)
  • 1/2 250 ml cup sugar
  • 2 eggs (we added this)
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • pinch of salt
  • 2 tsp vanilla extract

Preparation

  1. Wash and cut the apples

  2. Mix wet ingredients in a bowl
  3. Add dry ingredients (we also put them in a bowl before mixing)_scc_apples_03.jpg
  4. Leave it for 15 minutes to see how dense it gets (the coconut flour soaks the liquids quite well)
  5. If needed, add some liquid, but the dough should be rather dense
  6. Grease your baking tin and coat it with breadcrumbs or flour
  7. Pour the dough into the form and press the apples into it_scc_apples_04.jpg
  8. Bake for about 40 minutes in 180 C degrees (check it with a skewer, ours needed more, but we think our oven doesn't work well)
  9. Let it cool down
