When I wrote this post , it reminded me of the film that I had seen before : Beijing meets Seattle. Everyone knows that is a film about a love story . Today I will share a special dish from Shanxi province made by myself with you . it is fried naked oats fish . I have a nephew who is born dalian , but when she went abroad a few years ago , she met her husband from Shanxi on the plane. The boy’s family are very hospitable, when they came to visit Dalian, they always gave us a delicacy in Shanxi. One of them is Shanxi oats fish.

This food is made by naked oats, and oats is produced in Shanxi, Inner Mongolia, Hebei and other places . Also it is called naked oats. It can not make steamed bread, but only can be rubbed into strips, or steamed to eat. The following is the first time I learned to do fried fish oats. But I mixed the characteristics of Shanxi and Dalian, and it became a dish with Dalian seafood style . Now let’s share it together .

Ingredient:
Naked oats flour
Two eggs
Fungus
Spinach
Tomatoes
Scallop in Shell
Pork
Onion ginger

Methods :

First use the boiling water to mix the naked oats flour, then knead. Rub the naked oats with palm into strips ,then crushed . I spent 1.5 hours, rubbing into the fish, after all it was my first time to do this .

Two pots , one begins to boil water to boil the naked oats fish , and the other is used to fry dish .

Fried eggs , then put them into a bowl , cooked tomatoes , I also put some pork , spinach , fungus stir them together . At this time cooked the scallops and removed the shells . after they finished , ready to put the naked oats fish .

Put the naked oats fish into the boiling water . cooked a while , then you can see them float up , it is ok , then cool them with the cold water . it will be chewy.

Put the naked oats fish into the fried dish, plus Scallop meat. Isn’t it nice to eat the Shanxi food with Dalian seafood flavor ? it is delicious and chewy. You can also add some vinegar , hot sauce and other things you like .

Because it is the first time for me to do this food , there are some problems. for example , the naked oats fish broke into pieces . I asked my nephew’s mother –in –law the reason , she told me to put some potato power when I mixed the flour. And the best way to cook it is steaming ,not boiling it . So you see , it’s really like the saying : you are never too old to learn !

写这个帖子的时候,让我想起了看的电影,当北京遇到西雅图。而我今天跟大家分享的是学做山西美食莜麦鱼鱼。这话还的从外甥女结婚开始。 外甥女土生土长大连人,出国的时候飞机上遇到了现在的老公,一个山西的小伙子。婆家自然来自山西,更确切的是说来自山西大同。婆家的亲友很好客,每次来大连做客的时候,都要给我们做山西的美食。其中有一款就是山西莜麦鱼鱼。

这种鱼鱼是由莜麦磨成的,而莜麦在山西,内蒙,河北等地盛产。也叫裸燕麦。它不能做馒头,只能搓成条,或者片蒸着吃。炒着吃,或者煮着吃。下面就是我第一次学做的炒莜麦鱼鱼。不过我是结合了山西和大连的特点,做成了有着大连海鲜特色的莜麦鱼鱼。

材料:
莜麦粉
鸡蛋两个
木耳
菠菜
西红柿
扇贝
猪肉
葱姜
做法:

先把莜麦用开水烫一下,然后揉成团。之后开始搓莜麦鱼鱼。 搓的时候掐一小块面, 用掌心搓成长条,中间按一下。我用了一个半小时,搓成了一盘鱼鱼,看来还是初学,不熟练。

两个锅,一个开始烧水, 煮鱼鱼, 一个做炒菜。

先把鸡蛋炒熟, 盛盘。然后 锅内填油,炒西红柿,放进去木耳,菠菜(菠菜提前用开料好)。扇贝也是提前煮好, 去掉壳。

菜炒好后,等着放莜麦鱼鱼。

把莜麦鱼鱼开水下锅后,煮一会,看到透亮的时候,鱼鱼也漂上来了,说明好了。盛出来,凉水投凉。这样有劲道。

把鱼鱼放到炒好的菜里,加上扇贝肉,这样具有海鲜味道的炒莜麦鱼做成了。很是好吃,莜麦劲道,菜非常的鲜香。吃的时候加点醋,加点辣酱之类,自己随意。

因为第一次做,出现一些问题,后来问外甥女的婆婆才知道, 搓莜麦的时候,要放点土豆粉,那样搓出来的鱼鱼光滑, 不断。还有最好是蒸,那样鱼鱼透亮,更劲道。

原来做美食还有这么多技巧,不是想做就能做好的。 中国地大物博, 各个地区的劳动人民,根据自己当地的特点,气候, 创造出了不同的饮食文化。莜麦虽然东北少见, 但是在内蒙,山西,河北确实非常受欢迎的。看来活到老,学到老一点也不假呀!
