Yellow croaker’s meat is tender and delicious, it is one of my favourite fishes. I've always thought when we eat the sea fish , we should cook the simple way, the easier you are cooking , the better taste you will get . I love those steamed ways , so little oil but also the original flavor of the fish. when you cooked the fish , pay attention to the time and that’s ok. Now let’s share the steamed croaker with you .

Ingredients.

Yellow croaker
Onion ginger
Red pepper
soy sauce
Cooking wine
sugar
Peanut oil
Sichuan Pepper

Methods :

Wash the yellow croaker, remove the viscera, wiping a layer of salt on the fish, fish belly, then put some ginger and onions in the belly , marinate for an hour.

Put some water in the pot , then put the yellow croaker on the iron plate , put some cooking wine, steam it for 8-10 minutes. (the average size of 8 minutes, the bigger fish takes 10 minutes)

Take out the steamed fish and pour out the soup , set the dish on another china plate.

Put some ginger, onion red pepper ,soy sauce ,sugar on the fish , then heat the oil and them pour the oil on the fish . Now you can eat the delicious yellow croaker.

Tips

Put some chili pepper and some gingers in the fish bully to remove the fishy smell.

Pour out the fish soup after steaming .

It is suitable to control the time of steaming fish for 10 minutes.

黄花鱼肉质细嫩, 味道鲜美, 是海鱼中非常好吃的鱼类。大黄花刺少, 肉嫩,是我最爱吃的鱼。而且我一直认为,新鲜的海鱼,做法越简单越好吃。例如黄花鱼,我很喜欢清蒸,这样少了那些油过度消耗,而且还有海鱼原有的鲜味,所以做的时候,只要注意一下时间就行了。现在就把我做的清蒸黄花鱼分享给大家。

材料
黄花鱼
葱姜
红辣椒
酱油
料酒

花生油
花椒粒
做法:

将黄花鱼洗净,出去内脏,刮掉鳞片,抹一层盐在鱼身上,鱼肚子里,肚子内放葱和姜丝,腌制一小时。

锅内烧滚热水,将黄花鱼放上铁盘,2片生姜,一大匙料酒,大火猛蒸8-10分钟。(普通大小8分钟,稍大的鱼需时10分钟)

拿出蒸熟的鱼,倒掉鱼盘中的汤汁;摆盘。

另起一热锅,爆香姜丝、葱丝、红辣椒丝,倒在鱼上;再倒入酱油、糖在上面;

锅中再热油,将热油直接浇在葱丝等上面,即成。这样清蒸好吃的黄花鱼就好了

小窍门
鱼肚子里要放花椒, 葱姜去腥味。
蒸鱼后的汁要倒掉。
控制好蒸鱼时间,10分钟为宜。
