STEEMIT CULINARY CHALLENGE #12: Creamy Lamb Soup

This weekend I have spent skating with my beautiful family and we got extremely cold (it is not summer in this half of world anymore). Every part of us was freezing, and no, I am no longer worried about cold as ice fingers and toes, I am more worried about the coldness that has even touched our souls. It was strong! 

We all came back home with our noses red as Rudolph's, so to begin with everyone was served a big cup of natural mint tea. After that, I stayed in the kitchen to make a delicious soup that could warm up our souls a bit more.

In my refrigerator there are always two types of meat: lamb and chicken which does not correspond to the fact that we are in Lithuania because Lithuania is all about pork. My kitchen is more like Greek or Turkish one, and it is great.

For the soup I used lamb, garlic cloves, onion, carrot, potatoe, dill, salt, pepper, some water and coconut milk. No need to have coconut milk from the can, you can easily make yours with just 2 ingredients and it will be absolutely delicious. Check the recipe here.

Chop everything into nice slices or cubes and place into a big saucepan. Add all the spices too. 

Add some water or coconut oil. 

Start frying everything on a high heat, do not forget to mix. 

p.s. I have also added some laurel leaves (that is totally optional, I know many people who dislike it)

Reduce heat.

It takes time, so be patient. Let it simmer till vegetable become soft. 

Mix coconut milk with some water. And pour it into our 'soup-to-be'.

Mix it well. Add some more water (I added around 500ml) and let it simmer for another while.
