Delicious Chocolate Coconut Balls
When I was a kid I used to love making (and eating!) these chocolate coconut balls. My favorite part was crushing the biscuits in a bag with a rolling pin and rolling the chocolate mixture into balls.
Well, surprise! My kids feel the same way and LOVE making them with me.
It is so delicious and easy to make and a great activity to do with the kids for nice, good quality time.
By the way - They are also great for birthday parties or even wrapped in a ribbon tied cellophane bag and given as a small appreciation gift :)

Chocolate Coconut Balls
Crush the biscuits in a plastic bag with a rolling pin into small pieces. Place chocolate and butter in a saucepan over medium heat and stir occasionally until mixture is combined. Remove from heat. Add in the remaining ingredients, including the crumbled biscuits and mix. Let chill in the fridge for an hour.
Using damp hands, roll the mixture into balls:
Roll the balls through the shredded coconut to coat:
Chill in the fridge for 30 minutes and serve away!
* Can be stored in an airtight container in the fridge for up to 3 days.

Chocolate Coconut Balls:
Ingredients:
200 grams dark chocolate, chopped
60 grams unsalted butter
½ cup milk
¼ cup sugar
1 teaspoon pure vanilla extract
250 grams butter cookies (or plain biscuits)
1 teaspoon pure vanilla extract
For coating:
½ cup shredded coconut
Method:
- Put the biscuits into a plastic bag and beat with a rolling pin until crushed into small pieces. Transfer to a bowl and set aside.
- Place the chocolate and butter in a saucepan over medium heat. Cook and stir occasionally for 10 minutes or until mixture is smooth and combined. Remove from heat and mix in the remaining ingredients, including the crumbled biscuits. Let chill in the fridge for an hour.
- Using damp hands, take a small amount of mixture and roll into a ball. Continue making the balls with the remaining mixture.
- Spread the shredded coconut onto a plate and roll the balls through the shredded coconut to coat.
- Place the chocolate coconut balls on a plate. Chill in the fridge for 30 minutes and serve away!
* Can be stored in an airtight container in the fridge for up to 3 days. ENJOY!!!
