The perfect sauce for Pasta and/or for Pizzas
-Italian style tomato sauce-
I picked up this recipe a few years ago at an Italian cooking class. Since then it went through a few variations I made and now THIS is IT! Everyone loves it and now it’s time to share. It’s such a quick recipe and is great either for a delicious dish of pasta or a pizza sauce. You can either make it a chunky sauce or a smooth sauce by blending it with a hand blender. When its cooking the aroma of garlic and basil in the house is amazing!
It’s my go-to on a busy day when I have 20 minutes to put a meal on the table. With any pasta of choice, top the pasta with the sauce, add grated parmesan cheese and basil on top.

Ingredients:
2 tablespoons canola oil
1 large onion, chopped
3 cloves garlic, chopped
800 grams canned, diced tomatoes
30 grams butter
1 spring of fresh oregano (or 1 teaspoon dried oregano)
3-4 springs of fresh basil
2 tablespoons Italian seasoning
Salt and pepper to taste
Grated Parmesan cheese
Method:
Heat oil, over medium heat, in a medium sized saucepan. Add chopped onions and sauté until translucent (5 min.) add garlic, mix and sauté for another 1 minute:
Add the remaining ingredients and bring to a boil.
Reduce to low heat, cover the saucepan and cook at a simmer, stirring frequently, for 15-20 min.
(For a thicker sauce, with deeper flavor - simmer longer):
You can use a stick blender to puree the sauce until smooth:
Serve over pasta of choice with shredded Parmesan on top:
Or spread over pizza bases (makes enough for 2 large pizzas):
