Beans & quinoa
This salad is one of my favorite lunch salads. It is stuffed with proteins from beans and quinoa, and will keep your hunger away for hours. This portion is enough for two persons.
Dressing:
- 1 teaspoon of custard
- 1 teaspoon of honey
- 1/2 dl. olive oil
Varm the honey until it melts (do not boil!) Mix with oil and custard, salt and pepper
Beans & quinoa:
- 3 dl. precooked beans (chickpeas, butterbeans, soyabeans or whatever you like)
- 4 dl. precooked quinoa
Mix beans and quinoa with the dressing.
Mix into the salad:
- 1/2 choped onion
- 1/2 cubumber, sliced
- 100 - 150 g mixed letuce (your choice)
- top with sliced avocado
Ready to serve. You can try it with fried salmon and it works well as a dinner.
