I have a small vegetable garden in my backyard so I often use the various things I grow for cooking. Here is a quick recipe for pickled green tomatoes.
Towards the end of the season when your tomatoes stop ripening and growing, those green tomatoes are the best to use for pickling.
For this recipe you will need the following;
- 2 cups of vinegar
- 2 cups of water
- 4 cloves of garlic
- 4 tablespoons of sugar
- 2 tablespoons of salt
- 1 carrot
- 15-20 green tomatoes (depending on the size you can use more or less)
- 15-20 jalapeno pepper (if you want less spice or none, you can use less)
- Glass jars for storage (size of jars does not matter you just need enough jars)
Just make sure to use green tomatoes, because if your tomatoes are ripe they may be too soft and fall apart during pickling. Here is a video showing the procedure for this recipe.
