STEEMIT CULINARY CHALLENGE #46: Apple and Custard Tart

My second entry to @woman-onthe-wing apple challenge.

Short crust base:
200g flour
120g cold butter
60g icing sugar
pinch of salt
2-3 tablespoon cold water

Combine all ingredients in a mixer until just comes together, do not over mix! Wrap in a clean foil and rest in a fridge for 30 minutes. Roll pastry on to a baking paper and transfer to tart tin. Leave in a fridge for at least another 30 minutes. Preheat oven to 200C and blind bake for 10 minutes and then bake until golden without paper with weights at 180C.

To prepare custard :
Combine in a mixer: 6 egg yolks, 100g of castor sugar, 40g plain flour, 40g corn flour and meanwhile head up 600 ml milk with one teaspoon of vanilla extract. Once milk is hot pour mixture and stir until thick. Pour into cold pastry shell.

To prepare apples:
You would need 7 to 8 apples depending on the size, cut them in four removing all the seeds and thinly slice as you can see in the photo below. For the poaching liquid combine 3 cups water ,200g sugar, 1,5 lemon juice. Heat up until sugar dissolves and then poached sliced apples for 2 to 3 minutes, they should still hold they shape.
Roll roses and place them on baking paper.
To assemble push ready made roses into hot custard and leave it to cool down before serving :)
