This is a typical german dish, made from potatoes, onions and apples.
Kartoffelpuffer are small pancakes made from grated potatoe and onion.
Apfelmus is apple sauce.
The dish is a great mix of spicy and sweet food.

( I used one big onion for four big potatoes and no flour )
Attention:
Making Kartoffelpuffer takes a long time and will make your kitchen and hair smell like onion
For the Apfelmus, I used Fallobst ( apples from the ground ) - since it's free.
Potatoes and onions were also from my garden.
A good Apfelmus is almost white.
To achieve that, you have to pick the right variety of apple, not burn it, add some lemon juice ...
Also there must be a secret trick to it, because mine never comes out light.
You just need to cut out the bad bits from the Fallobst.
I also try to submerge the pieces under water, while i work, to stop them from oxidizing
note: apples float; pears sink
Before boiling the apple pieces, drain all water.
Then just turn the heat on and watch the magic.
Stir, only to make sure it won't burn.
Making the Apfelmus takes around 20 minutes
If you work cleanly and prepare little jars, you can store the freshly cooked sauce and conserve it.

Always serve Kartoffelpuffer with some sugar.
