πŸŒπŸ«β˜•πŸ¨ STEEMIT CULINARY CHALLENGE # 35: DELICIOUS Choco-Banana-Mocha-Peanut-Butter-Cup-Icecream (that's good for you!)πŸŒπŸ«β˜•πŸ¨

Do you like chocolate? Bananas? Coffee? Peanut Butter? How about ice-cream? This is for you! πŸŒπŸ«β˜•πŸ¨

How's a banana-y smooth, creamy chocolatey-mocha, salty peanut-butter, melt-in-your-mouth, make you eat it all in one-sitting but it's OK because it's made with healthy ingredients, sound?

Good, I thought you'd say that! (Did I mention vegan and sugar-free yet?) I have got you covered! You can even put this stuff with a raw, vegan, caramel coated brownie (I'll share the recipe laterπŸ’œ) if you want to give your taste-buds a real out of this world experience! πŸ˜‰

This is my first entry for steemitculinary challenge, hosted by @woman-onthe-wing. I hope you enjoy the recipe! It was inspired by my peanut butter cups I made to share with you all the other day!

First off, let's take a look at the ingredients!

(I made about 12 small, 1-scoop servings)

  • 3-5 small, frozen bananas
  • 1/4 cup organic soy milk
  • 2 tbs black cold-brew/chilled coffee (don't worry, I'll share that secret with you another time!)
  • 1 handful of dates (about 6-7)
  • 1 handful of almonds (about 8-10)
  • 1 small piece of vanilla bean or 1 tsp vanilla extract
  • 2 frozen peanut butter cups (see my vegan, sugar free recipe here)

Ok so now that we have the key players ready for action, let's place it all in a food processor/blender!

(I had to switch from my small attachment to my larger blender and add in the peanut butter cups then due to the size of my processor)

Blend away my foodie friends! Once it's a nice consistency, it will be cold from the frozen bananas and peanut-butter cups.

If you're impatient like me, you can eat it straight away like that as a delicious, creamy soft-serve! Don't forget to share! Some might even get up in your face asking for a lick! πŸ’œπŸ˜‰

Or if you like the traditional scoop-edition, you can put it in trays like mine seen here, (these little dishes work amazing to give the perfect scoop!) in the freezer for a little while to get it extra cold and turn into a hard, scoopable ice-cream!

Give it some time to harden (I left it overnight), place it on a plate with a brownie and life just got pretty dang delicious if you ask me ;)

I hope you enjoy this as much as I did... I just can't get enough!
Sending love through food!
