Tofu is a kind of nutritious food, especially for vegetarian. I'm not a vegetarian, but also love it.
So, today I would like to share with you a common Chinese dish ---mapo tofu which is one of the Sichuan Cuisine, and is also one of my favorite dish. In this dish, there are three layer flavor, very delicious. One is pork , the other is chicken stock, the third is cilantro, bean chilli paste and pepper. All the ingredients gave a strong flavor to tofu, serving with rice is very very very yummy..
Ingredients:
2 tbsp dark soy sauce
2 tbsp shaoxing wine
2 tbsp fermented chilli bean paste
1 cup pork, lean ground
1 1/4 cup chicken stock
4 tbsp vegetable oil
2 tbsp ginger, grated
2 garlic cloves,minced
2 green onions with the white park sliced thinly
600 g toufu , blanch in hot water for 2 min,then cut into small cubes
1 tbsp sichuang peppercorn
2 tbsp water
1 tbsp of cornstarch
1 tbsp sesame oil
1 tbsp of cilantro, chopped
Instructions:
Place the pork in a large mixing bowl and marinate it with soysauce,shaoxing wine and chili bean paste. Mix well. Set aside.
Take another large mixing bowl, pour chicken stock and the rest of the soy sauce, shaoxing wine and chilli bean paste.
Heat a pot and add in 2 tbs vegetable oil, and then add in pork, stir-fry it for about 5 min and then pour the chicken stock, add in ginger, garlic and green onion. cooked it for 3-5 min with low heat.
in the mean time we mix the cornstarch and water, and then pour it in it.add in tofu and don't break up it, and then add in cornstarch slurry, put it right around. you can see it thicknning. And at last add in sichuang pepper, cilantro or green onion. it is done.

原料:
植物油
猪肉末
豆腐
花椒
大蒜
青葱
鸡汤
玉米淀粉
料酒
生姜
豆瓣酱
香油
水
做法:
1、豆腐切块,提前用水焯2分钟,水里放少许盐,捞出备用。
2、猪肉末提前用酱油,料酒腌制几分钟。
3、锅里放植物油,放入猪肉末翻炒大约2分钟后,放入葱姜蒜,郫县豆瓣酱,放入鸡汤,放入豆腐,煮开,最后用水淀粉勾芡,放一点香油,撒上香葱或者香菜即可。
