Homemade Mango Ice Cream 芒果冰淇淋

Hello steemians:

Today I would like to share with a cool sweet dessert in this hot summer day. Now the outdoor temperature is 33 degrees, so I think eating this is very cool, brisk and invigorating.

The most important step of making a smooth ice cream, is the beating process when it is frozen. (of cause, if you have a ice cream maker, you can save a lot f work and ignore the following . )

We know that if you do not beat, directly put it in a freezer to frozen, the ice cream will become very cold ice.
The purpose of beating is to prevent ice cream from a large ice crystals.
Another purpose of beating it is to mix with air, which can make the volume of ice cream bulk, taste more better.

Now let's look at it in detail.

Ingredients:

mango 280 g
yolk 3
sugar 175 g
milk 400 ml
whipping cream 250 ml
vanilla extract 1/2 teaspoon
lemon juice 25 g
salt a pinch

Instructions:

1 Place yolk, sugar 130 g, milk in a saucepan, stir well.
2 Heat the saucepan over low heat and stir it constantly until the liquid boiled, turn off the heat and pour whipping cream into it, stir it well.
3 Add vanilla extract and salt, let it cool for a while.

4 In the meantime, peel the mango and remove kernel. using a food processor to beat the mango until they are puree of mango. add sugar and lemon juice, mix well and then put it in a freezer.

5 After half an hour, place the puree of mango in the batter. stir it well and frozen it for 40 minutes.

6 then take it out and beat it with a whisk for a while and put it in freezer for 40 minutes again.

7 Repeat it for at least four times. texture is depending on this step.

The mango ice ream is done. Divide it into several parts and store it in the refrigerator.
Serve with your favorite fruit. enjoy it.
