All right, the big-ass salad is not a new idea. But it is a great one. It's a big salad with a variety of different ingredients. The magic lies in the imagination of the salad maker and the possibilities are endless!
Here are the basics, with some ideas of what you might add for each of these steps. Go nuts! Heck, add nuts! Add as many or as few of the ingredients you want, and in whatever combination you want!
- Take a bed of greens, any kind you want (romaine, kale, shaved brussels sprouts, mixed greens, cress, choi)
- Take some herbs, any kind you want (basil, cilantro, parsley, chives, green onions)
- Bulk it up with some crunchy and colorful veggies (cucumber, bell peppers, carrots, asparagus)
- Add some tart (capers, olives, pickled beets, pickled veggies)
- Add some sweet (raisins, craisins, chopped apples, sliced berries)
- Add some crunch (hemp hearts, pistachios, slivered almonds, crunchy edamame, crispy bacon)
- Add some protein (over-easy egg, bacon, cooked chicken, beans)
- Dress it up with whichever dressing or oils and vinegars you have on hand.
The best thing about the big-ass salad is that it can be anything you want it to be and change from day to day, so you'll never get bored eating a salad again.
