Roasted Eggplant Salad or Ensaladang Talong
Whenever we buy eggplant from the market, the fastest dish that we could hurriedly think is the fried talong and tortang talong, otherwise, we just include it as one of the ingredients for a certain dish that we call 'utan bisaya', as well as sinigang and paksiw dishes.
By the way, eggplant is called 'talong' in Filipino.
For the longest time, I have not prepared this dish. The last time I ate a roasted eggplant salad was when my mother has not moved out to my sister's place. So, I thought about making this dish for a change.
This is my own version of 'ensaladang talong'.
How I Made The Eggplant Ensalada
Because I only thought about making eggplant ensalada out of the blue, I did not have the ingredients that I should have included in this dish.
I would have wanted to put some "red chili peppers" and "tomatoes" on it...
Unfortunately, we did not have anything available in the kitchen. It would be too late to go the nearby stores as well, because they are already closed for the day.
I settled on the following ingredients instead:
- 2 eggplants
- chopped onions and ginger
- vinegar
- salt and pepper
If in case, you would like to follow my recipe, I suggest that you include the red chili peppers and tomatoes for a more appetizing and delish roasted eggplant salad.
Improvising procedure
We did not have enough time to prepare for a more convenient grill over charcoal heat (which is what my mother traditionally does)...
so what we did was grill it directly over stove fire, just like the picture below.
The result was okay, so I think improvisation was worth it.
Let it cool for awhile. The next thing to do is to just peel off the burnt skin of the eggplant. Then, take the flesh, you may use a fork to spread the flesh apart.
As soon as you're done taking the eggplant flesh, put in on a plate or a bowl. Then, add in the onions, ginger, vinegar and mix it thoroughly. Add salt and pepper to taste. By the way, the amount of vinegar you would put depends on how sour you would want it to be.
