Bacon Surprise Mini Pancake

I got this idea off pinterest and while John was seriously put off by these and the idea in general, I honestly think they were tasty and worth sharing. All it is is regular pancake batter with a piece of bacon cooked inside, a suprisingly good combination.

I improvised and made smaller pancakes, cutting my pieces in half before encasing them in pancake.

Ingredients:

1 c flour
3/4 c milk
2.5 t baking soda
1/4 c sugar
2 t butter, melted
5 pieces bacon, cooked and cut in half.

I combined everything but the bacon in a measuring cup with a spout. Heat a pan to medium low heat and pour the first bit of batter, just small dots to make the initial circle. Add a piece of bacon in the center of each and cover with a small amount of batter. Cook on both sides until finished and serve immediately with maple syrup to dip.
