Chocolate...and...cranberries? It's a lot better than it sounds, more reminiscent of sour cherry and chocolate flavors together in a cookie with a chewy middle and crisp edges. I made these because I have a huge bag of dried cranberries left over from when a friend was visiting. They were better than even I expected and so good that Rebel went into the kitchen and tried to take them off the counter. He succeeded in knocking a few on the floor and even tried to go back for one of them while booking it out of the kitchen.
What I used:
1 cup brown sugar
1/2 cup white sugar
180g salted butter
1 egg
1 egg yolk
1 t vanilla
2 c flour
1/2 t baking powder
2 cups chocolate chips
1/2 cup dried cranberries.
How it's Done:
- Cream the butter and sugar together.
Add the egg, egg yolk and vanilla.
In a separate bowl, combine the baking powder and flour then add those too.
- Fold in the chocolate chips and cranberries with a spoon.
Spoon onto a pan in whatever size you want. The smaller the cookie the shorter the bake time, the bigger, the longer it will take and the lower temperature you should use.
Bake at 350 degrees, or less if you're going for big cookies, for 10-25 minutes (much more for big or giant cookies)
Eat them hot or let them cool, that's up to you. I store them in the fridge but that's because I have microscopic ants that get into literally everything like that.
