I finally got around to making home made salsa in my molcajete and it turned out pretty awesome. I used the verbal directions of our local Mexican mechanic and I will say, he definately knew what he was talking about. The only thing I did different was add a little red onion.
Start with a clean molcajete.
Smash some garlic to remove the skins...
Take one chile, I used a dried ancho from the central market.
And the garlic, I used like 4-5 large cloves. Cut off the one end.
Get some oil hot in a pan and add the chile, allow to fry for a few minutes.
Add the garlic, allow that to fry...
Until it looks like this, then remove it.
Add a little sliced onion....
Smash it around...
Add 2 chopped roma tomatoes.
Smash that around too.
Season to taste with salt and lime, serve immediately. This went pretty far between four hungry people on tacos.
