It's muffin time, and I honestly can't believe I haven't gotten busy with the muffins sooner as I've got a pan for them. I got that urge yesterday morning and decided on strawberry muffins, which were a lot less sweet than I was expecting but still tasty.
What you need, for 8 muffins:
1/4 cup butter melted
1/2 cup milk
1/2 cup sugar
1 egg
1 t vanilla
2 t baking powder
1 3/4 c flour
1 cup chopped frozen strawberries
How it's done
- Combine the butter and sugar, then add the milk.
- Add the egg and the vanilla.
- In a separate bowl, combine the baking powder and flour.
- Toss in the chopped berries to the flour and stir until they're coated, then add the flour mixture to the wet ingredients.
- Stir to combine and evenly distribute among 8 muffin cups.
- Bake at 350 for 20 minutes or until toothpick comes out clean.
