Tacos con huitlacoche Photo Shoot and Thoughts on Corn Smut

This one has a bit of a funny story behind it. A few days ago I found a video shared by @cardsanarchy of the harvest of huitlacoche which is something I've seen on sale at Walmart fresh with the mushrooms. I've considered purchasing the 14 peso pack of fungus but haven't just due to not knowing what it was. Honestly when I found out it was ruined moldy corn I was grossed out.

Then @emancipatedhuman the token Anarchist Mexican jumps in and answers a few questions for me about taste and texture. Before I know it I'm purchasing the stuff at Walmart. I got some tips on how to make it and prepared some with some sauteed onions as a taco topper for steak tacos and it was WAY better than expected.

I knew the corn smut was promising when I tried a piece when it was finished plain without wanting to spit it out.

It's got the texture of soft corn, as described and it's pretty nice and mild in flavor. They're pretty and they make me feel fancy dammit. I've now put them in breakfast tacos and again on my tacos tonight. I'm hooked. For now I share these few photos, tomorrow I'll share the rest of the photos with the recipe.

Corn smut anyone? Fun fact, this is considered a plague of sorts in the United States and farmers will destroy fields of the stuff. I found this post about a chef delighted to hear from his farmer that the corn crop had been infested. It was interesting to read posts by bloggers in the United States who have to settle for canned citing "it's impossible to find fresh" when it's literally a staple at Walmart here.
