Happy Friday everyone! We are experiencing a sudden heat wave here in London and I am loving it 😎☀️
I was lucky enough to have the day off and didn't want to spend much time indoors cooking, so I just threw some things together and ended up with something unexpectedly delicious!
What You'll Need:
- 1/2 pot of hummus
- 2-3 mini wholemeal pitta breads
- 3 tsps crispy fried onions
- 2 inches of cucumber, thinly sliced
- A handful of small fresh spinach leaves
- 5-6 cherry tomatoes, halved
- 2 tsps olive oil
- Ground black pepper
Method:
Lightly toast the mini pitta breads.
Remove and cut open.
Toast again until they are evenly toasted and crispy.
Lay the pitta bread pieces flat.
- Top each piece with a generous spoon of hummus and spread evenly.
- Sprinkle the dried onions on to the hummus and then top with some black pepper.
- Top with spinach leaves and cucumber.
- Then add the halved tomatoes, a drizzle of olive oil and some more pepper.
It's so simple!
I was surprised by how yummy these were- the combination of hummus and onions is just heavenly and though these dried ones aren't the healthiest, this snack is still pretty nutritious regardless.
You can always omit the onions completely or use raw red onions for a healthier version that is still super tasty!
