So two days ago I filmed a lobster miso soup recipe, the video will be out soon on d.tube and youtube, but for now, I leave you with a simple form recipe for lobster miso soup.
For this recipe, I used the front half of a delicious Spanish local lobster, I used the tail end of the lobster to make lobster sashimi you can see that in a last post here.
here are the simple recipe ingredients:
- 1.5 liters water
- a small piece of kombu
- a hand full of katsuobushi
- cut lobster body
- lobster claws
- 3 tablespoons white miso paste
- spring onion
quick recipe:
soak konbu in water of 30 min.
bring to a boil then remove konbu, turn off heat add katsuobushi let soak for 10 minutes, no stirring.
sieve out katsuobushi, add lobster body bit and cook for 15 minutes (last 4 minutes add the claws)
remove lobster bits, remove from the heat and add white miso paste.
sieve out any bits.
add chopped spring onion, crack open lobster claws and add to the soup.
done.
