I made a cappuccino cake over the weekend
It was rather tastey with its sweet,sticky, white chocky topping and although it had coffee in it, the coffee flavour i found was quite mild.
For the cake mixture;-
~225g self raising flour
~225g butter (softened)
~225g golden caster sugar
~3 tbs cocoa powder
~3tbs ground coffee mixed into 2tbs of boiling water
~4eggs
For topping
~A bar of white cooking chocolate(115g)
~55g Butter
~3tbs milk
~175g Icing sugar
First off sift the flour,baking powder and cocoa powder into a bowl. Add the sugar.
Next add the softened butter,coffee mixture and eggs and whisk together until fully combined and smooth.
Spoon the mixture into a shallow greaced and lined tin. 8"×11"
Put into a preheted oven at 180 degrees for 30 to 40 minutes until golden brown and slightly firm to the touch.
Leave the cake to cool in the tin for 10 minutes ,then turn out to cool completely on a wire rack.
For the topping, melt the white chocolate,milk and butter together over a pan of boiling water.just enough for the chocolate to melt.
Leave to cool and mix in the icing sugar. Put the topping over the cake and cut into slices.
I think i should of cooled my chocolate more before adding the icing sugar,was very runny but very tasty i didn't complain one bit!!
